Naturally Fermented Goodness

Great bread takes time!  Always has, and always will.  At White Birch Bakery our dough is naturally fermented to allow the flavours to natural develop over time, creating flavourful, wholesome and delicious bread.  Our starters are the heart of our bakery.  Hamish and Rupert are our wonderful starters. Each gives their own unique flavour to the breads they make. There are NO artificial flavors and NO artificial preservatives, conditioners or colors in our bread.  Each loaf is skillfully made, and hand shaped for you to enjoy!

 

How to Store our Sourdough and Baguettes

Storage – On the day you purchase your fresh bread, leave it at room temperature in a plastic bag. The naturally fermented bread will keep for 4-5 days.  Baguettes have a 24hr shelf life.  To bring back freshness to a day-old baguette, place the baguette quickly under the tap to wet the bread and place into a preheated 350°F oven for 6-8 min or until crusty.  It will taste amazing again!

Freezing – Our bread also freezes well wrapped in plastic, then in foil. Defrost it at room temperature then refresh it as described below before eating.

Refresh – To refresh the full loaf, mist the bread with water and place it in a preheated 350°F oven for 6-8 minutes, or until crusty. For sliced bread you may toast the bread for delicious results.

Refrigerating and microwaving bread are not recommended.
